Crispy herb salmon
Prep time: 20 minutes - Cooking Time: 15 minutes - Serves: 4
Ingredients
300ml olive oil
2 tablespoon dill fonds
2 tablespoon thyme leaves
2 tablespoon rosemary leaves
2 tablespoon parsley, chopped
4 Lemons
600g Salmon fillet, with skin
Sea salt & cracked pepper, or no salt spice mixture

1 tablespoon wine, white –

Method
Score the skin and cut salmon into four pieces and place into a
non-metal oven dish. Juice two lemons and zest, chop in the remaining lemons in
half.
Using a third of the oil add 1 tablespoon of parsley, 225ml of
olive oil and combine with the thyme, rosemary, dill, zest and juice. Season marinade
and pour over salmon. Let stand for 30 minutes.
Preheat oven to 180C/350F/Gas 4.
Remove salmon from marinade and for 1 minute
fry skin side down. Turn to seal other side. Remove and place in to roasting
tray skin side up, season. Roast for 10 minutes. Serve with a drizzle of oil
the remaining parsley and the lemon halves.
