salad of potatoes, sweet red onions and oregano
Prep time: 10 minutes - Cooking time: 20-30 minutes - Serves 4
5 large potatoes
2 small red onions, thinly sliced
½ tablespoon oregano
2 tablespoons red wine vinegar, or alternative
120ml olive oil
2 tablespoons green olives, pitted
Salt, to taste
Method
In the skin, cook the potatoes in boiling water until tender. Drain.
Remove skin and quarter them lengthways. In a large bowl place the potatoes and
add the olive oil, salt, vinegar and oregano. Serve.
