Penne and Pancetta with Radicchio
Prep time: 10 minutes - cooking time 20 minutes - Serves: 4
Add broccoli as a replacement for radicchio
Ingredients
1 tablespoon mascarpone
225g cream, double (adjust to preference)
1 lemon, zest and juice
150ml sock, vegetable
200ml wine, white (optional)
1 chilli, red, chopped
2 packs pancetta
2 cloves garlic, chopped
4 shallots, chopped
1 pack penne
2 heads radicchio
Serve: parmesan, fresh basil
Method
Bring water to boil, add salt and then cook the penne, drain and
return to pot.
While cooking gently sweat the garlic and onion until soft then
turn the heat up and add the pancetta, radicchio and chilli. Cook for 3
minutes. Add the stock (wine optional), reduce, add cream and continue cooking
for 2 minutes. Add the lemon juice, zest and mascarpone whilst mixing. To the
cooked pasta add the radicchio, stir , and top with parsley, basil and
parmesan. Serve.
