COFFEE GRANITA

Prep Time: 3 hours – Cooking Time: none - Serves: 4

INGREDIENTS
600ml espresso coffee
120g caster sugar

Cream mixture
300ml cream, double
1 vanilla pod, de-seeded and split
1 tablespoon icing sugar

DIRECTIONS

In a baking dish with 1 litre capacity pour cool, brewed and sweetened coffee. Freeze for one hour. Check the granita for ice crystals around the edge. If there is, slowly move them into the centre. Place back in the freezer checking the mixture every 20 minutes until the coffee is a mass of crystals. Once achieved store the granita in the freezer in an air tight container until needed.
