Vegetable Chow Mien
INGREDIENTS
85g Pak choi
85g bean sprouts
4 tablespoons groundnut oil
200g egg noodle
2 slices root ginger, shredded
3 shiitake mushrooms, de-stemmed, sliced
1 tablespoon sesame oil
1 garlic clove, crushed
1 pinch, sugar
Salad Onions, sliced (as desired)
4 tablespoon soy sauce
2 tablespoon dry sherry (optional)
Drizzle of sesame oil
Salt and black pepper
METHOD
Cook noodles as directed on the pack. Rinse in cold water, drain
and then add a drizzle of sesame oil to ensure the noodles remain separate
Cook the noodles as per instructions on the
pack and drain. Rinse in cold water, drain thoroughly and toss in sesame oil
and mix to keep the noodles separate.
Using a wok, heat the groundnut oil, add
garlic, ginger and stir fry for 30 seconds. Add the mangetout and mushrooms.
Over
a high heat stir fry for 3 minutes. Finally, add the noodles, soy, sugar,
seasoning and sherry – stir fry for 1 minute and then add the pak choi, bean
sprouts and salad onions.
To serve, drizzle with sesame oil.
